Peanut Butter Cup Cake

Several weeks ago M. and I explored a little country store in the mountains where we picked up a slice of this cake to share. I ate my half slowly - savoring every bite and trying to figure out how it was made. It was so yummy that I decided to try and re-create it at home for our Father's Day menu last weekend. A definite hit -

Peanut Butter Cup Cake

Bake a chocolate cake in two round cake pans; cool. Frost the top (not the sides) of one of the cakes with Peanut Butter Frosting. (Beat 1/4 C. peanut butter, 1/2 tsp. vanilla and 1 C. 10x sugar. Add 1/4 C. milk and another 1 C. 10X sugar. Blend well.) Chop desired amount of peanut butter cups and sprinkle over frosting. Place the other cake on top of the first layer. Cover entire cake with Chocolate Fudge Frosting. Sprinkle more chopped peanut butter cups on top. Enjoy with a big glass of milk.
