Another recipe. E. and I tried out this one for breakfast yesterday - delicious.
Banana Chocolate Chip Muffins
1 1/2 C. flour
1/3 C. sugar
1 tsp. baking soda
1/4 tsp. cinnamon
1/8 tsp. salt
1 1/3 C. mashed banana (approx. 3 medium bananas)
1/3 C. butter, melted
1 tsp. vanilla
1/2 C. semisweet chocolate chips
Preheat oven to 375. In a large bowl, whisk dry ingredients. In another bowl, whisk wet ingredients until blended. Combine the two mixtures; stir just until moistened. Fold in chocolate chips. Fill greased or papered muffin cups. Bake 17-20 minutes. Cool 5 minutes before removing to wire rack.
