Peanut Butter Apple Crisp

After visiting M.'s aunt and uncle on Sunday afternoon, we were invited to visit their almost-50-year-old Summer Rambo apple tree. We gathered two bags full of the fragrant beauties, and on Monday I whipped up a batch of Peanut Butter Apple Crisp. We enjoyed it after an evening of clothes shopping for all the boys. So good - the taste of Autumn itself . . .

Peanut Butter Apple Crisp

Preheat oven to 350.
Mix the following together and place in a 13x9" pan:
6 C. peeled and thinly sliced apples
1 tabl. cornstarch
1/2 tsp. cinnamon

Sprinkle 3 tabl. of water over the apples.

Combine the following and sprinkle over the apples:
1 C. oats, uncookied
1/3 C. brown sugar
1/4 C. flour
1/2 C. peanut butter
5 tabl. softened butter

Bake 45-50 minutes or until apples are tender.
