Fresh Peach Cobbler


Our two peach trees gave us a bumper crop of fruit this summer. The freezer is loaded with peach slices and halves, and several jars of peach jam are on the kitchen counter waiting to be put in the pantry. I also tried a recipe for Fresh Peach Cobbler - it's delicious warm or cold.

Fresh Peach Cobbler

Mix the following together gently and place in an 8x8" baking pan:
5 C. freshly diced peaches
1/4 C. sugar
2 tabl. flour
1/4 tsp. almond extract
1 tabl. lemon juice

Mix the following together and drop on top of the peaches:
1 1/2 C. flour
3 tabl. baking powder
1/2 C. sugar
1/2 tsp. salt
1/2 C. margarine, softened
1/2 C. milk
1 egg, well-beaten

Bake at 350 for 35 minutes or until dough is lightly brown.
