I've been making a bunch of quick breads lately - Zucchini, Blueberry Orange, and now Banana - to keep on hand in the frig for easy, summer breakfasts. I lost my Banana Bread recipe and had to go hunting - found one on the internet and adapted it a bit. It fits the bill . . .
Banana Bread (makes 1 large loaf)
3 bananas, smashed
1/3 C. melted butter
3/4 C. sugar
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
Pinch of salt
1 1/2 C. flour
Preheat oven to 350. Mix fruit and butter together. Stir in sugar, egg and vanilla. Sprinkle the mixture with the soda and salt. Add flour. Pour in buttered 4x8" pan. Bake for 1 hour.
