Banana Whoppie Pies


This is a variation on the traditional whoppie pie recipe. The taste test results are as follows:

M. – too moist for him
J. – definitely yummy but still liking the traditional better
B. – every time I turned around, he had one in his mouth – enough said
C. – wanted nothing to do with anything containing bananas
E. – his face lit up & declared that he definitely likes these better than chocolate ones

Banana Whoppie Pies

½ C. butter, softened
¾ C. sugar
¼ C. packed brown sugar
1 egg
1 tsp. vanilla
½ C. mashed ripe banana
½ C. buttermilk (or ½ tabl. vinegar added to ½ C. milk)
2 C. flour
½ tsp. salt
½ tsp. baking powder
½ tsp. baking soda

In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In a small bowl, combine banana and milk. Combine flour, salt, baking powder and soda; gradually add to creamed mixture alternately with banana mixture. Drop by tablespoonfuls onto parchment-lined baking sheets. Bake at 350 for 12-15 minutes (until firm). Cool for 2 minutes and then remove to wire racks to cool completely. Make filling recipe found here and spread it onto one cookie, sandwiching another cookie on top. Wrap individually with Saran Wrap; store in frig.

I have about 5 bananas here waiting for baking, so maybe I will try this. I may have to add some cocoa powder to the mix for my chocolate lovers - me included! Thanks, A.T.

Just made a batch of banana (all white sugar) with chocolate filling. Might try another batch with the brown sugar now that I have it softened.
