Zucchini Chocolate Chip Cake
1/4 C. butter or margarine, softened
3/4 C. sugar
1/4 C. oil
1 egg
1/2 tsp. vanilla
1 1/4 C. flour
1 tabl. baking cocoa
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. ground cloves
1/4 C. sour milk (1 tsp. vinegar mixed in with 1/4 C. milk)
1 C. peeled, shredded zucchini
1 C. semi-sweet chocolate chips
In a large mixing bowl, cream butter and sugar. Beat in oil, egg and vanilla. Combine dry ingredients; add to creamed mixture alternately with sour milk. Stir in zucchini. Pour into a bread pan. Sprinkle with chips. Bake at 350 for approx. 35-40 minutes or until toothpick comes out clean. (NOTE: If you double the ingredients, bake in a 13x9" pan and bake 45-50 minutes.)
