Canning Chow-Chow

Canned jars of chow-chow
My sister-in-law and I enjoyed a rather interesting day together.  The ladies of our church were invited to help can chow-chow at a church in the neighboring county.  Knowing there'd be fun and fellowship amidst the service, we made the trip and thoroughly enjoyed it.  The women of the host church have been making several hundred jars of chow-chow each year for the Brethren Disaster Relief Auction - a huge fund-raising event to help disaster victims around the world.  We found out that these ladies have been performing this labor of love every year for more than 20 years and that chow-chow sales are a very substantial portion of the auction receipts.

A huge tote is used to mix the various veggies together by hand before cooking and canning.

Many hands do, indeed, make light work . . .
