Pumpkin Chocolate Chip Muffins
These are perfect for fall mornings . . .
Pumpkin Chocolate Chip Muffins
1 1/4 C. sugar (I plan to cut this next time - they're plenty sweet with the chocolate chips.)
1/2 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 3/4 C. flour
2 eggs
1/4 C. vegetable oil
1 C. pumpkin
1/4 C. milk
1 C. semi-sweet chocolate chips
Heat oven to 350. In a large bowl, sift together sugar, salt, baking soda, cinnamon and flour. In another bowl, mix together eggs, oil, pumpkin and milk. Add wet mixture to dry and mix lightly just to blend. Fold in chocolate chips. Fill greased muffin tins half-way and bake for 20-25 minutes. Makes approx. 18 muffins.
