Peaches-and-Cream Refrigerator Oatmeal


These would make lovely additions to a breakfast or brunch table. . .

For each guest:

Stir together 1/2 C. uncooked regular oats, 1/4 C. vanilla yogurt, 1/4 C. milk and 2 tabl. chopped fresh peaches.  Spoon into a jelly jar.  Cover with metal lid and screw on band.  (Repeat for as many servings as desired.)  Chill 8 to 12 hours.  Top each serving with a tablespoon of chopped fresh peaches and a drizzle of honey.  (As I ate the one I made up, I drizzled honey in it all along the way . . .)

You had me up the part that mentioned oatmeal. Not sure what it is about it - I try and try to incorporate it in my diet, because it is so healthy for you, but I just can't take the taste and texture.

Keep trying it in different ways every now and then, Sandy. You might eventually hit on a way that you like it. I didn't eat it for a long time either but now eat it almost every day with fruit and maple syrup!
