Garlic Chive Butter
This is the perfect time of year to make Garlic Chive Butter as the new potatoes are being dug from your garden. Tender potatoes, smashed with a fork, sprinkled with salt and pepper and lathered with Garlic Chive Butter is a delicious addition to your plate . . .
To make, allow 1/4 C. butter to soften slightly. Finely chop garlic chives until you have 1/2 tabl. worth of it. Mix in well with the butter. Place in a container and allow to harden and blend for a few hours or days. Add a dollop to potatoes or other veggies. (You can do this with regular chives as well - I just happen to like the stronger flavor of the garlic variety.)
