Blueberry Oatmeal for One

After learning from my in-laws how to cook oatmeal the "right" way (in other words, not cooking it to death), I actually like it.  I developed this little concoction and have been eating it for breakfast almost daily.

Blueberry Oatmeal for One

In a small saucepan, pour 2/3 C. water and 1/2 C. rolled oats.  Cover, turn on medium heat and set a timer for 2 minutes.  After 2 minutes, turn off heat, remove lid and stir.  Put lid back on and set timer for another 2 minutes (off heat).  In the meantime, place 2 tabl. of frozen blueberries in a small bowl.  After timer goes off, stir and then put half of the oatmeal on top of the blueberries.  Add 1/2 tabl. of granulated maple sugar (you could use maple syrup instead).  Layer with 2 more tabl. of frozen blueberries, the rest of the oatmeal and another 1/2 tabl. of maple sugar.  Microwave for 40 seconds.
