Yes, another recipe. I can't help it - fall is the time when I get the urge to try out new recipes. This one was made for breakfast last week when Caleb and Eli were both home in the morning. The fact that there was only one muffin left in the whole lot proves they were a hit here. (And I tucked that one away for an afternoon snack!)
Crumbly Applesauce Muffins
1/2 C. butter, softened
1/2 C. sugar
1 C. applesauce
1 egg, beaten
2 C. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground cloves
1/4 tsp. salt
Crumb Topping:
1/2 C. butter, softened
3/4 C. flour
3/4 C. quick-cooking oats, uncooked
1/3 C. brown sugar, packed
2 tsp. cinnamon
Blend all ingredients until crumbly.
Combine butter, sugar, applesauce and egg. In a separate bowl, combine flour, baking soda, cinnamon, cloves and salt; stir into butter mixture just until moistened. Fill paper-lined muffin cups 3/4 full; sprinkle with crumb topping. Bake at 350 for 25 minutes. Makes 12-16 muffins.
