Strawberry Bread

The strawberries are in.  Nearly every morning finds me deciding what I'll do with the harvest for the day.  I tried a new recipe for Strawberry Bread that I'm happy with - especially when it's warm . . .

Strawberry Bread

1 1/2 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 C. sugar
2 eggs, beaten
1/2 C. + 2 tabl. vegetable oil
2 C. sliced strawberries

Combine dry ingredients and make a well to add the wet ingredients.  Fold in the berries and stir just enough to moisten.  (NOTE:  This batter is much stiffer than typical quick bread recipes.)  Pour into a greased loaf pan.  Bake at 350 for approx. 40 minutes.
