Purple Pansies & Shoo-Fly Pies

The pansies are planted in the windowboxes, and the pies are made.  Productive work on a pleasant morning -

Shoo-Fly Pie (makes 1 deep 9" pie)

For crumbs:
1 1/2 C. flour
1 tsp. cinnamon
1/2 C. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 C. butter, softened

For liquid:
1 1/4 C. King Syrup
1 egg
1 C. warm water
1 tsp. baking soda
1 tabl. flour

Preheat oven to 400.  Pre-bake 1 deep 9" pie shell, if desired.  (I like to put mine in about 8 minutes or so.)  Mix crumb ingredients with fingers; set aside.  Whisk together liquid ingredients; set aside.  Put approximately half of the crumbs into the pie shell.  Pour the liquid over top and add remaining crumbs.  Bake at 400 for 40-45 minutes or until set.  (You might want to cover the bottom of your oven with aluminum foil - shoo-fly pie sometimes has the tendency to bubble over.  It's important to use a deep 9" pie dish - you'll have less chance of a mess this way!)
