Pumpkin Roll & Old-Time Radio Shows

Pumpkin Roll

Preheat oven to 375.  Cover a jelly roll pan (a large cookie sheet with sides) with waxed paper.  Spray the paper with cooking spray and sprinkle with flour.  Combine 3/4 C. flour, 1 tsp. baking powder, 2 tsp. cinnamon, and 1/2 tsp. salt; set aside.  Beat 3 eggs and 1 C. sugar; add 1 C. pumpkin.  Add the wet mixture to the dry mixture; mix.  Pour into pan and bake 10-15 minutes until toothpick comes out clean.  In the meantime, dampen a tea towel, lay it out on a table and sprinkle generously with sifted 10X sugar.  When cake is baked, flip the pan upside down onto the tea towel.  Remove the pan and peel off the waxed paper.  Carefully roll up the cake in the midst of the tea towel.  Allow to cool 1 hour.  While cooling, mix up the frosting in the mixer - 8 oz. softened cream cheese, 4 tabl. butter, 1 C. 10X sugar and 1 tsp. vanilla.  Unroll the cake, spread with frosting and re-roll; refrigerate.
